A MARRIAGE OF CRAFT AND SCIENCE

Husband and wife, Mike and Jenny Griffo, co-founded Griffo Distillery back in 2013.

Before that, Mike was doing post-doc in physics at UC Santa Cruz. Jenny was working dream career in int’l education development. Life was crazy with lab hours and long work trips.

One day during a magical Sonoma County afternoon outside a friend’s winery, pondering how they want to build their futures, Mike joked “Why don’t we open a winery?!”. Jenny laughed, “we’re not farmers and winemaking is farming … we should do a distillery!”.

They wanted Mike to be able to utilize his PhD and knack for innovation. Jenny wanted to finally work locally and develop a business that was a part of the community.  And they knew they wanted to be a part of the movement back to creating things with intention and love and responsibility.

CUSTOM-BUILT PER DOCTOR’S ORDERS
Dr. Mike special-ordered their copper still from Kentucky legends Vendome in what the fourth-generation family of makers says was a first—he asked them to add several ports so he could capture data throughout the process. He then built the software running the entire distillation process. In fact, Mike and his Dad built out the rest of the distillery together over two years, from trenches and plumbing to wiring. All part of his vision for a (more) scientific approach to spirits.

FIRST SPIRIT, FIRST AWARD
Griffo finally opened its doors in 2015 and entered its first spirit, Scott Street Gin, in the 2016 SF International Spirits Competition. Earning Griffo’s first award, a gold medal. Griffo's scientifically crafted spirits have been winning awards ever since.

INVESTMENT IN GRIFFO’S FUTURE
In 2023, Mike & Jenny brought in partners, led by CEO Will Maroun, to help expand and grow the business. Now with a larger organization Dr Mike is able to focus his laser-like brain on production and innovation. While the rest of the team helps Griffo bring people together at events, restaurants & bars, and beyond.
