We are a grain to glass production facility located in Petaluma, California. We create fresh, beautiful, small-batch spirits with a focus on precision and craft. Griffo Distillery produces 5 key market spirits and diverse limited releases. Griffo is additionally a production facility offering full cocktail and wine canning services and custom distilling.

Role and Responsibilities:

The primary function of this position is to work as a team with the Head Distiller in production. The Production Lead will be trained to take ownership of our canning and brewing process and will work closely with our Head Distiller to learn Griffo Distillery’s innovative technology and craft-based processes. There may also be opportunity for the right person to take on distilling responsibilities over time. This position’s main responsibilities are:

  • Leading on non-distilling production

  • Receiving of product via tanker and trucks

  • Managing bottling and canning

  • Equipment maintenance and cleaning

  • Inventory management

  • Brewing and fermentation for spirit production

  • Cellar work, including barrel filling and loading

  • Maintain sanitary standards on all equipment

  • Record keeping for internal records and legal compliance

  • Maintaining and improving general organization

  • Occasionally this position will be asked to engage with the public at our Tasting Bar and provide tours (post-Covid-19)

Minimum Qualifications:

  • Sense of humor

  • Comfort in a startup environment where all team members must pitch in

  • Algebra skills

  • Strong attention to detail

  • Commitment to cleanliness

  • Lift 60+ pound bags repeatedly throughout the day

  • Comfort with loud to moderate noise during milling

  • Ability to stand for long periods of time

  • High school diploma

  • 21 years or older

  • Ability to take direction yet work autonomously

Additionally desired qualifications:

  • Intellectual curiosity to learn more about your position, the spirit making process and how to improve each step

  • Comfort operating a forklift

  • A background in brewing, wine making or baking

  • A natural inclination toward the sciences or engineering

  • Experience with mechanical maintenance and plumbing

  • Interest or capacity in coding
